If you're looking for a flavorful and juicy roasted chicken recipe, you've come to the right place. This dish is ideal for a family dinner or to impress your guests. The combination of seasoned chicken with baked potatoes and roasted onions creates an irresistible flavor.
Ingredients:
- 1 whole chicken (cleaned)
- 3–4 medium potatoes, peeled and cut into wedges
- 2 large onions, cut into thick slices
- 4 cloves of garlic, minced
- Juice of 1 lemonJuice of 1 lemon
- 1 tablespoon mustard
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh rosemary or thyme (optional)
- Olive oil
Instructions:
Preheat the oven to 375°F (190°C). If you're using a wood-fired oven, make sure it's at a moderate temperature and the fire is stable.
In a bowl, mix the lemon juice, mustard, paprika, garlic, salt, pepper, and a generous drizzle of olive oil. Use this mixture to marinate the chicken. Rub it thoroughly over the entire chicken, including under the skin for more flavor.
In a baking tray, place the potato wedges and onion slices. Drizzle with olive oil and season with salt, pepper, and rosemary or thyme if desired.
Place the marinated chicken on top of the vegetables or in the center of the tray. Optionally, tie the legs with kitchen twine so it roasts evenly.
Bake for 1 hour to 1 hour and 20 minutes, depending on the size of the chicken. Baste occasionally with its own juices so it stays moist and flavorful.
To check if the chicken is done, insert a knife into the thickest part of the thigh. If the juices run clear, it’s ready.
Remove from the oven and let rest for 10 minutes before carving. This helps preserve the juices and makes it easier to cut.
Serving suggestion:
Serve with a fresh salad or crusty bread to soak up the delicious juices from the pan. This recipe is perfect for preparing in a traditional oven or, even better, in a wood-fired oven for that authentic, rustic flavor.
