Both make excellent pizza. The difference is in flavor, control, fuel and routine.
Wood-fired
- Flavor and heat. A live fire gives the smoky flavor and high dome heat that classic Neapolitan pizza is known for. Our traditional ovens are made of refractory materials that hold that heat.
- Long cooking. A well-insulated wood oven keeps cooking after the fire dies down. The Forno Sabbia and Lustro can cook on residual heat for up to 12 hours.
- Routine. You'll light and feed a fire, manage the coals, and clean out the ash. Use dry, seasoned hardwood; see our firewood.
Gas
- Convenience. Turn it on and the temperature stays steady. That makes gas good for busy service or a quick weeknight pizza.
- Fuel. In Puerto Rico that usually means LPG (propane); professional models can also run on natural gas (methane).

Gas/wood hybrid: both in one oven
A hybrid oven runs on gas for convenience and on wood when you want the flavor. Our hybrid options:
- Home: FWO IGNIS 85, FWO IGNIS 100, Forno Piccolo and Forno Venice.
- Professional: the Alfa Pro Quick line (2P, 4P, 6P and Pro Quick), offered wood, gas or hybrid.
- Built to order: MAM ovens can be built for wood, gas or combined firing. The MAM Napoli's gas versions use MAM's Modular Fire burner in 17, 22 or 34 kW.

Frequently asked questions
Does a gas pizza oven taste different from wood?
Wood adds smoke flavor from the fire; gas doesn't. Many cooks choose a hybrid to get both.
How much wood does a pizza oven use?
It depends on the oven and how long you cook. Alfa lists 11 lb/h for the Quick 2P, 15.4 lb/h for the Quick 4P and 19.8 lb/h for the Quick 6P. Home refractory ovens like the Forno Sabbia and Lustro heat up with 2–3 pieces of wood.
Can I convert a wood oven to gas later?
Choose a hybrid model if you think you'll want gas. The IGNIS 85, IGNIS 100, Piccolo, Venice and Alfa Pro Quick are offered with both fuels.
