The Sunmix SMART 50 is the right-sized spiral mixer for pizzerias and restaurants with steady mid-volume production — a touch-screen, inverter-driven workhorse that handles up to 50 kg (110 lb) of dough per cycle while still mixing small batches cleanly. The variable-speed inverter lets you dial in everything from a gentle autolyse to a final 300 rpm finish on high-hydration doughs.

Engineered in Schio, Italy by Sunmix. CE certified. Made for daily commercial use.

Touch-screen control panel

The integrated 7-inch touch panel lets the operator store up to 20 recipes × 6 steps each. Once a recipe is dialed in, the mixer reproduces it identically every time — eliminating operator-to-operator drift on dough quality. Useful when training new staff, running multiple shifts, or experimenting with different formulations.

Infrared dough temperature sensor

An infrared sensor reads the dough's surface temperature continuously during mixing, with no probe contact. Set a maximum temperature threshold and the mixer auto-stops when it's reached — protecting yeast activity on warm-kitchen days and giving you precise control over fermentation timing.

Variable speed inverter — 50 to 300 RPM

The single-phase motor runs through a frequency inverter, giving smooth, infinite speed adjustment from slow ingredient incorporation (50 rpm) to high-hydration finishing (300 rpm). The high end is intended for short bursts at the end of the mix on doughs above 60% hydration; the low end is ideal for biga, poolish, and gentle pre-doughs.

Reverse function

The bowl can rotate in reverse, which lets ingredients absorb together without active mixing. Standard practice for refreshing natural starter, hydrating biga, or letting a pre-dough autolyse before the main mix.

LED bowl lighting

Two LED lamps illuminate the inside of the bowl on demand. Lets the operator watch dough development through every stage — gluten window formation, hydration, finishing — without leaning over or using a torch.

Retractable wheels

Built-in retractable casters let one person move the 210 kg (463 lb) mixer for cleaning, then drop it back to its fixed footprint for operation. No need for a separate dolly.

How the SMART 50 fits the Smart Line family

The Smart Line ranges from 30 kg to 60 kg in dough capacity, each with identical features and progressively larger bowl + motor. Pick the SMART 50 if:

  • You produce ~200 pizzas per shift (rule of thumb: 50 kg dough ≈ 200–215 typical Neapolitan dough balls at 230 g each).
  • You want a single mid-sized batch per service without committing to the SMART 60's larger crate, motor, and footprint.
  • You've grown past the SMART 30 / 40 and want headroom without jumping straight to the top of the line.

For higher volume, the SMART 60 (60 kg dough, 4 kW motor, 81 L bowl) is the same machine sized up. For lower volume, the SMART 30 / 40 share the same touch-screen + infrared sensor feature set with smaller bowl + motor — let us know your typical batch size and we'll recommend the right size.
